Oh how I miss my grandmother!
I had a dream about her the other night and when
I woke up, I felt like I just was with her.
I love dreams like that.
We were in church and she reached
across my mom to give me a hug.
Sweet.

She's been gone quite a few years now
but today is her birthday and I was thinking
about her and how much I miss her.
I wanted to share one of my favorite recipes with you.
It's been around for awhile but I love it.
You need to try it.
It will change your world.
White Chicken Chili
8 skinned and boned chicken breasts
2 medium onions, chopped
2 garlic cloves, chopped
1 Tbsp oil
2 (14 oz) cans chicken broth (low sodium)
4 (15.5 oz) cans cannellini beans, rinsed and drained
2 (4.5 oz) cans chopped green chiles, undrained
1 tsp salt
1 tsp ground cumin
3/4 tsp dried oregano
1/2 tsp chili powder
1/2 tsp ground black pepper
1/8 tsp ground cloves
1/8 tsp cayenne pepper
Toppings: shredded Monterey Jack cheese, cheddar cheese, salsa, sour cream, black olives, cilantro
Cut chicken into bite-size pieces.
(I only had 5)
Saute chicken, onion, and garlic in hot oil for about 10 minutes. Stir in broth and the rest of the ingredients; bring to a boil.
Reduce heat and simmer, uncovered for 30 minutes.
Serve with desired toppings.
Makes 15 cups.
I have to show my onion chopper.
Actually, it is my everything chopper.
It chops onions in 3 seconds.
It was one of the last things my grandmother bought me.
She got it from a yard sale.

This looks scrumptious! What a sweet post remembering your grandmother. I need one of those everything choppers. I have a post on my blog that gets tons of spam, same post every time. I'm glad I moderate my comments. Anyhooo... have a great evening :-)
